February 16, 2011: Leftover Makeover - Rice Pudding Alongside Mango

I accept an Indian mango rice pudding recipe that I similar really much, but it uses canned creamed rice.  Unsurprisingly many other online recipes start out alongside uncooked rice. 

So I decided to fly it.  In a saucepan, I stirred together two cups of cooked rice, a 400mL tin of kokosnoot milk, 1/2 a loving cup of the mango's canning syrup, two tablespoons of maple syrup, 1/2 a teaspoon of cinnamon in addition to a 1/4 teaspoon of cardamom.  I brought the mixture to the boil, in addition to then simmered the lot until the rice was soft in addition to plump 1 time to a greater extent than - this took approximately xv minutes.  I permit it cool nearly to room temperature earlier serving it upwards alongside the sliced mango.

It wasn't quite therefore lovely equally my other recipe, but this was a really pleasant agency to recycle rice.  I enjoyed it, too, equally an afternoon snack at my desk the next day; it's sweetness in addition to filling without causing bloating or a saccharide spike.  I did uncovering a few days later, though, that the grains inwards my concluding serve had reverted to difficult chewiness.
