Pumpkin, saffron & orangish soup
(from Yotam Ottolenghi's Simple)
60ml olive oil
ii onions, sliced into 2cm wedges
1.2kg of butternut pumpkin, peeled, seeded too cutting into 3cm cubes
1 litre of vegetable stock
1 litre of vegetable stock
ii tablespoons harissa (we only used a chilli paste, because nosotros couldn't rail downwards harissa inward the supermarket)
1/4 teaspoon saffron threads
zest of 1 orange
180g crème fraiche
parsley leaves to garnish
common salt too pepper
80g pumpkin seeds
common salt too pepper
80g pumpkin seeds
ii teaspoons maple syrup
1/4 teaspoon chilli flakes
Preheat the oven to 170°C.
Mix the pumpkin seeds, syrup too chilli flakes inward a modest bowl amongst a sprinkle of salt. Spread them on a lined baking tray too roast for xv minutes until they starting to brown. Set aside to cool.
Turn the oven upward to 220°C.
Combine the oil, onion too pumpkin inward a large bowl amongst a proficient sprinkle of common salt too pepper. Mix good too thence pose them out on a baking tray. Roast for 25 minutes until everything softens upward nicely too thence accept them out of the oven too fix aside.
Put the stock, harissa, saffron, orangish zest too roughly to a greater extent than common salt too pepper into a large pot. Bring it all to the boil too thence add together inward the pumpkin, onions too baking oil. Stir, trim back the estrus too simmer for 5 minutes.
Take everything off the heat, stir inward the crème fraiche too thence blend it all upward amongst a manus blender.
Serve, topped amongst pumpkin seeds too parsley.
