More Simple

We had a friend over for a sun dinner together with turned 1 time again to Simple for inspiration. We worked through the pasta department looking for ideas, settling on this chickpea together with za'atar pasta every bit our centrepiece. Orecchiette amongst chickpeas together with za'atar

45ml olive oil
1 small-scale onion, finely chopped
two garlic cloves, minced
two teaspoons solid set down cumin
10g thyme leaves, stems removed
1 lemon, zested together with juiced
two 400g tins of chickpeas, drained
1 teaspoon dark-brown sugar
400ml mock chicken stock
250g orecchiette pasta
50g infant spinach leaves
15g parsley, roughly chopped
1-2 teaspoons of za'atar
1/4 loving cup capers
common salt together with pepper

Heat the olive stone oil inward a large saucepan together with throw inward the onion, garlic, cumin, thyme, lemon zest together with approximately common salt together with pepper. Fry for 3-4 minutes until the onion softens together with starts to brown.

Reduce the oestrus together with add together inward the chickpeas together with sugar. Fry for 8 minutes or so, trying to move the chickpeas to dark-brown together with move crispy (we failed). Add the stock together with lemon juice together with simmer for 6-8 minutes, until the sauce has reduced slightly.
