Chickpea Soup

After the success of one slow, soaked-chickpea recipe from the lab cookbook, nosotros were corking to endeavour another! Chickpea soup

150mL olive oil
1 large onion, finely chopped
500g dried chickpeas, soaked overnight
1-2 celery sticks, thinly sliced
1 fresh bay leafage (I used 2 dry out ones)
juice of 1 lemon
2 tablespoons apartment leafage parsley, finely chopped
sprinkle of dry out oregano


Set a real large saucepan over medium rut too pour inward the olive oil. Add the onion too saute it, stirring regularly, until it starts to brown.

Drain too rinse the chickpeas, too add together them to the saucepan, stirring them unopen to to coat them inward the oil.

Add the celery too bay leaf, too pour inward hot H2O until the chickpeas are submerged to a depth of nigh four cm (it's a lot of water). Bring it all to the boil, too skim off whatever froth. Turn the rut downwardly a bit, popular a lid on the pot, too allow it all simmer for 1-1.5 hours, until the chickpeas are soft.

Add lemon juice, enough of salt, too laid gently for 5-10 minutes. Carefully crush some of the chickpeas inward the pan until yous gain your preferred consistency, or blend amongst a mitt mixer. 

Add the parsley too oregano, too to a greater extent than tabular array salt too lemon juice if yous like.
