Pumpkin Alongside Sweetcorn Salsa, Feta & Pumpkin Seeds

We had a Dominicus dark amongst around fourth dimension to spare then decided to brave a double Ottolenghi repast - roasted cauliflower, grape & cheddar salad and this pumpkin dish. (We were genuinely supposed to brand a unlike pumpkin dish from Simple, but I stuffed upward the shopping listing completely, then nosotros ended upward amongst this instead.) 

It's slow plenty to brand - the charring of the corn wasn't equally straightforward equally I'd imagined, but that was the exclusively slight complication. Pumpkin amongst sweetcorn salsa, feta & pumpkin seeds
(slightly adapted from Yotam Ottolenghi's Simple)

one butternut pumpkin, peeled, seeded in addition to cutting into 3cm wedges.
75ml olive oil
two corn cobs, husks removed in addition to strings stripped off
one large ruddy chilli, seeded in addition to finely diced
iii limes - zest in addition to juice
minor bunch coriander
a few stems of mint leaves
30g pumpkin seeds, toasted
50g feta, crumbled
common salt in addition to pepper


Preheat the oven to 220°C.

Mix the pumpkin amongst two tablespoons of the petroleum addition lots of common salt in addition to pepper. Spread the pumpkin wedges out on a large baking tray in addition to roast for 25 minutes, until golden brown. Set aside to cool.

Char the corn equally best y'all tin - Ottolenghi uses a chargrill, nosotros tried it inwards our shape Fe frying pan over high heat. The aim is to blacken the corn kernels upward a flake - it'll accept 10 minutes or so.
