August 31, 2011: Baked Cherry-Chocolate Cheesecake

I was late striking amongst a hankering for some home-made dessert, something Michael together with I could bask on the couch later on last spell watching our latest TV fave (Misfits, for the record. Please spare me your spoilers!). As I browsed through my bookmarked recipes I kept a item oculus out for VegMel recipes together with sent through a shortlist to Michael. He chose this cheesecake.

My version was neither vegan nor gluten-free, but some little substitutions could homecoming it both these things.

crust
150g choc ripple biscuits, crushed to crumbs
75g butter, melted
pinch of salt

filling
500g cream cheese, softened
3/4 loving cup sugar
1 1/2 tablespoons evidently flour
finely grated zest of i lemon
3 eggs
1/2 teaspoon vanilla

topping
200g preserved together with pitted sour cherries
1/3 loving cup liquid from the preserved cherries
juice of one-half a lemon
2 tablespoons sugar
3 teaspoons cornstarch
