Pineapple Fried Rice

Pineapple fried rice
(adapted from a recipe on 101 Cookbooks)

two teaspoons grated fresh ginger
two cloves garlic, minced
1 loving cup pineapple pieces
1 loving cup infant spinach leaves
1 loving cup roasted cashews
1/4 loving cup fried shallots
