Pomegranate-Glazed Tempeh & Vegetables

This is 1 of the recipes that I was showtime drawn to when given Super Natural Every Day concluding yr - caramelised tempeh chunks volition create it for me every time! Pomegranate-glazed tempeh & vegetables
(adapted slightly from a recipe inwards Heidi Swanson's Super Natural Every Day)

2 pocket-size circular eggplants
600g tempeh
400g pumpkin
six cloves garlic
2 pocket-size lemons
2/3 loving cup pomegranate molasses
2/3 loving cup olive oil
2 teaspoons salt
1 teaspoon chilli flakes
handful of parsley, roughly chopped
100g feta, crumbled

Preheat the oven to 180°C. Line ii large baking trays alongside paper.

Peel the pumpkin. Chop the eggplants, tempeh too pumpkin into 1cm cubes. Finely chop the garlic. Divide the vegetables too garlic evenly across the baking trays too grate over the zest of the ii lemons (set the residual of the lemons aside for any else you lot want).

In a bowl, whisk together the pomegranate molasses, olive oil, common salt too chilli. Pour iii quarters of the dressing over the vegetables too toss it through to evenly coat them equally best you lot can.

Now the veges volition bake best if they're spread out alongside minimal overlapping. This meant I had to laid upwards aside one-half the vegetables too bake them inwards ii batches.
