March 19, 2007: Pumpkin Too Chickpea Salad

After a weekend of eating out, together with eating out inwards a rattling unwholesome way, dinner on Mon dark was footling to a greater extent than than throwing together around nutritious ingredients without besides much fuss or creativity. (Though to live on fair, i mightiness reckon KH's combination of couscous, sardines together with sweetness chilli sauce to live on highly creative!) Thankfully this assembly-line dish doesn't skimp besides much on flavour.

Pumpkin together with chickpea salad

Roast 2 cherry capsicums until the pare is black. While they're roasting, take the pare of a quarter-pumpkin together with die the flesh into cubes.

Once the capsicum skins are blackened, accept 'em out of the oven to cool. Use their tray for the diced pumpkin, drizzling amongst only a footling olive oil. Bake the pumpkin inwards a moderate oven for nearly xx minutes, giving it i or 2 stirs along the way.

As the pumpkin bakes, rinse 2 cans-worth of chickpeas. Once the capsicum is cooled, peel off the skins together with chop upwards the flesh into strips. Make a dressing of 2 tablespoons of mustard (preferably wholegrain, but I used Dijon) amongst a flake of beloved or sugar. Don't over-sweeten, the pumpkins volition add together their bit.

Once the pumpkin is tender, mix the lot together inwards a large bowl, along amongst generous handfuls of babe spinach leaves.
