White Beans, 'Bacon' & Leeks On Polenta

I've been having around dental treatments this month, hence I'm treating my oral fissure alongside a niggling extra attention together with trepidation. There've been soups together with smoothies together with the strange soothing bowl of H2O ice cream, soft breads together with sautes. Eventually I messed up, ordering yoghurt at a cafe that arrived alongside granola all over it - those deliciously crunchy quinoa clusters easily snapped 1 of my temporary plastic 'teeth'.

While I walked habitation early on to mass an extra repair appointment, Michael shopped for this blessedly gentle meal. (slightly adapted from a recipe on What I Cooked Last Night)

70g mock bacon
1 large leek
1 tin give the sack white beans (e.g. canellini, butter, ...)
two tablespoons olive oil
1/2 loving cup white wine
3/4 loving cup parsley, roughly chopped
1L 'chicken' stock
1 loving cup polenta
3/4 loving cup parmesan, grated (omit for a vegan version)
common salt together with pepper

Chop the mock bacon into 1cm squares. Finely spell the leek. Drain the beans.

Heat 1 tablespoon of the petroleum inwards a frypan together with develop the mock bacon until it's black together with a combat crisp. Transfer the mock bacon to a plate. Heat the 2nd tablespoon of petroleum inwards the frypan, add together the leek together with the white wine. Cover the pan together with develop the leeks over depression estrus for 10 minutes.

While the leeks are cooking, convey the stock to a boil inwards a large saucepan. Gradually whisk the polenta into the stock and, in 1 lawsuit it's dorsum upwards to a boil, plough downwardly the heat. Stir the polenta continously every bit it cooks together with thickens, close 10 minutes. Stir inwards the parmesan until it's melted together with flavour to taste. Turn off the estrus together with lay a lid on the polenta to croak on it warm.

When the leeks are really soft, conduct maintain off the lid. Add the drained beans, parsley together with 'bacon' to estrus them through.

Spoon the polenta into shallow bowls together with pile the leek mixture on overstep to serve.
